Meatball Subs

Ingredients:

For The Sauce

– 2tbsp extra-virgin olive oil

– Tomatoes (as required)

– 2 fresh basil leaves

– 1 stalk finely chopped celery

– 1/2 small finely chopped onion

– 1/2 medium finely chopped carrot

– Salt (as required)

– 1 bay leaf

For The Meatballs

– 1 pound finely ground beef

– 1 large peeled potato

– Salt (as required)

– 1 cup grated parmesan cheese

– 2tbsp milk

– 1/4 cup extra-virgin olive oil

– 4 to 6 pieces split open baguette

– 1tsp fresh chopped thyme

– 1/2 tsp minced garlic

– Freshly ground pepper

meatball-subsPut olive oil in a pot and heat over medium fire. Add carrot, celery, onion, salt about a pinch and cook. Stir occasionally for about eight minutes till get soft. Put tomatoes in a bowl, crushed with hands, add bay leaf, basil and ½ cup water. Now put this bowl on fire and cook until the sauce gets thicken, about 30-40 minutes. Season this sauce with salt. Now do a little preparation for meatballs. Take a saucepan with little water, put potato, add 2tpsp salt, cover and boil it until tender. After boiling, cool slightly and mash it properly. Now add ground beef, garlic, milk, thyme, ¼ tsp pepper,  1tbsp olive oil and 1tsp salt, mix this mixture with hands until combined well. Now make meatballs with this mixture. Put the oil in a saucepan and fry the meatballs on medium heat until golden brown for about 8-10 minutes. Transfer these fried meatballs to the sauce and cook for five minutes. Now fill the baguette piece with fried meatballs and topping it with sauce. At the end sprinkle the shredded parmesan.

Hot and Spicy Pie

Ingredients

– 7-8 fresh basil leaves

– 2tbsp grated parmesan cheese

– 2 boneless chicken breasts without skin

– Extra-virgin olive oil

• -2-3 sausages

– 1tsp dried basil

– 1 pound pizza dough

– 2tsp ground cumin

– 1/4 cup sliced chicken pieces

– 1tbsp garlic powder

– 3/4 cup pizza sauce

– 1tbsp salt

– Just for dusting all purpose flour and Cornmeal

– 1tbsp black pepper

– 1 cup shredded mozzarella cheese

– 1tbsp white pepper

hot-and-spicy-piePreheat the oven at 500 degrees Fahrenheit and put pizza stone or baking sheet in oven. Take a bowl, combine black and white pepper, cumin, dried basil and garlic powder in it. Now apply olive oil on chicken with a brush, then rub combined spices on it. Heat the grill pan and grill the marinated chicken until cooked through over medium heat for about 15 minutes with turning sides. Grill the sausage for about 12-15 minutes with turning sides until cooked through. Now take pizza dough, stretch it by applying flour, about 12-13 inches round. Put this stretched dough on a cornmeal-dusted pizza peel, now put it in oven and cook for 7-8 minutes. After little baking take it out from oven, apply pizza sauce, ½ cup mozzarella, grilled sausage and chicken. On top, sprinkle remaining Parmesan and mozzarella. Again, put in oven for about 7-8 minutes until bubbly. Sprinkle with fresh basil, it’s ready to serve.

Penne with Red Pepper sauce

Ingredients

– ¾ cup whole-wheat penne

– 6-7 ripe tomatoes, crushed with hands

-2 onions, finely chopped

– 2 cloves garlic, very finely chopped

– 1tbsp unsalted butter

– ¼ crushed red pepper

– 1 small red bell pepper, finely diced

salt to taste

– 2/3 cup cream

– 2 tbsp extra-virgin olive oil

– 1 cup grated parmesan cheese

fresh basil leaves as required

– 3tbsp chicken broth

Boil penne for about 10-12 minutes, in a large pot of boiling water with salt to taste and olive oil, and drain it.

For Sauce

penne-with-red-sauceIn a frying pan, add butter and melt it over medium heat. Add onions and cook for about 3-4 minutes until get slightly softened. Now add garlic and crushed red pepper, stir for about 1-2 minutes. Add bell pepper and stir for 30 seconds. Remove from heat; add crushed tomatoes and salt and mix it well. Bring back to medium heat and cook for about 7-8 minutes. Add cream and cook for about 3-4 minutes until sauce turns slightly thickened. Add parmesan and basil leaves, stir a little. Transfer this sauce to a blender with chicken broth; blend it well until turns into smooth puree. Return the sauce to frying pan, heat gently, season white and black pepper.  Add pasta to this sauce and toss to mix well. Serve it warm by topping with more parmesan and basil.

Minestrone Soup

  Ingredients

– 2tbsp extra-virgin olive oil

– 3-4 cloves garlic, finely chopped

– 2-3 stalk green onions or celery, diced

– 2tbsp chopped fresh basil

– 1 large carrot, finely diced

– 1/3 cup green beans (cut into pieces)

– 1tsp dried oregano

– 1tsp dried basil

– Salt and freshly ground pepper

– 1-2 Fresh red tomatoes, finely diced

– 6 cups chicken broth

– 1/2 cup boiled kidney beans, drained

– 1 cup elbow pasta

– 1/3 cup shredded parmesan cheese

– 1 large onion, finely diced

minestrone-soupPut a pot over medium heat, add oil and onion, and cook for about 4-5 minutes until transparent.  Add garlic and stir slightly. Add carrot, green onion/celery and cook for about 5-6 minutes until vegetables get softened. Add green beans, basil, dried oregano, salt and pepper to taste, and cook for 3-4 minutes. In a pot, add tomatoes and chicken broth; boil for 10-12 minutes. Now add kidney beans and pasta, cook for 10-12 minutes until softened. Add all vegetables in it, season with salt. Transfer into a bowl and top with parmesan and basil.

Double Chocolate Biscotti

Ingredients

– 2 cups all-purpose flour

– 1 cup castor sugar

– 1/2 cup cocoa powder

– 1 1/2 teaspoons good quality baking powder

– 1/2 teaspoon baking soda

– 1tsp vanilla extract

– ¼ tsp almond extract

– 4 ounces plain butter

– 2 large eggs

– 1/2 cup chocolate chips

– 1 large egg white, evenly beaten

– 1/2 teaspoon salt

white chocolate and chopped mint leaves for decoration

Method

Take a bowl; add cocoa powder, flour, baking powder, salt, butter and baking soda. Mix it well. In another large bowl; add eggs and extracts, mix it well with electric beater. Combine this mixture with flour and mix well. Add chocolate chips and mix well. Now make 2 inches wide log with this dough and put it on a baking sheet coating with cooking spray. Brush these logs with egg whites and put in oven. Increase temperature of oven to 350 degrees Fahrenheit. Bake for 15-20 minutes until firm, crisp and dry, turning once.

Melt white chocolate in the oven and decorate the biscotti with it. Top with mint leaves. A delicious dessert is ready.
