Cod is one of the most consumed fish at home that is why I’m sharing this recipe of Golden Potato croquettes; you can also try the same recipe with other fish like, monkfish, sole etc… But always be careful as the fish should be without thorns for an unforgettable taste. Generally Golden Potato croquettes dish is consumed primarily during all year, and is usually served in dinner.
Cod comprises a high amount of protein as well as B vitamins and minerals such as iodine, fluorine and zinc. It also provides omega 3 fats that helps fight cardiovascular disease. Potatoes, meanwhile, provides starch and carbohydrates, which enhance the caloric content of the recipe.

Ingredients for Golden Potato croquettes
1 Packet breadcrumbs
3 medium potatoes
3-4 tablespoons milk
3-4 large eggs
Salt
Pepper
Nutmeg
Extra virgin olive oil

Preparation
Soak the Cod fish in cold water for 2 hours in a bowl. Boil 2 eggs and chopped it well. Boil the potatoes in salted water. Peel and mash them with the help of potato masher or fork. Add cod fish flakes (skinless, boneless) to mashed potatoes. Fry the garlic in oil and, once golden, smash it and add in mixture.
Add salt, nutmeg and pepper to taste. Mix everything well. Add milk and stir again. In this case the milk is just to give a little more softness and juiciness. If you want the soft dough, you can add more, but it will be too soft and then difficult to work with this dough. Let the dough get cool in the fridge for 15 minutes.
Make balls the size croquettes of the mixture and fill it with boiled eggs mixture. Make a mixture of Plain flour and bread crumbs. Beat 2 eggs in a bowl and beat well. Dip croquettes in breadcrumbs mixture then in beaten eggs and bread crumbs again. Fry in plenty of hot olive oil at 180 ° C until golden brown. Drain and keep on absorbent paper for removing excess olive oil.
