In this recipe of Italian Chicken Salad, I’m using chicken breast. It’s a good source of high protein with low calories & fat. In fact, it is world’s leading source of animal protein and has been a healthy alternative to red meat. It contains small amounts of vitamins and minerals necessary for our body. For example vitamin C, calcium, iron and several other types of vitamin B. Chicken breast is a recommended food during childhood, adolescence and pregnancy. Because during these stages of life great amount of all those nutrients is needed, present in it.
Chicken breast has high amount of retinol, alpha and beta-carotene, lycopene and all derivatives of vitamin A. They are essential for proper eye health and function.
A source of phosphorus & selenium
Chicken breast is rich in phosphorus, an essential mineral that nourishes our teeth. Also, it make our bones, kidneys and liver strong. It maintains the function of the central nervous system. It contains selenium, an essential mineral control functions of metabolism and our immune system.

Things you need to prepare Italian Chicken Salad
4 half boneless chicken breast without skin
3-4 cups fresh salad leaves
1 cup cherry tomatoes
1 medium green pepper sliced
½ cup mozzarella cheese
For the dressing
2 slices of onion
2 tablespoons oregano
1 teaspoon black pepper
¼ teaspoon basil
1 tablespoon parsley
1 clove garlic
4 tablespoons vinegar
5 tablespoons olive oil
Salt to taste
How to prepare Italian Chicken Salad?
To make the dressing
Mix vinegar with oil and add all the other ingredients.
Marinate chicken in dressing for 10 minutes.
Preheat the grill, put the chicken and let it roasting for 6 to 7 minutes from each side or until cook well.
Cut chicken into diagonal slices.
Mix all the vegetables and chicken.
In each serving plate put a tablespoon of cheese along with the salad.
