Stuffed Chicken Breast with sweet & sour prunes sauce
Ingredients for Stuffed Chicken Breast
Servings for 4
Oil for greasing
4 chicken breasts, skinless and boneless
125 grams of cream cheese into 4 slices
125 grams of cheddar cheese into 4 slices
1/2 cup milk
3/4 cup bread crumbs
125 grams of grated parmesan cheese
2 cloves garlic, minced or finely chopped
100 grams of melted butter
1 lemon, juice
1/4 teaspoon salt, or to taste
1/4 tsp white pepper
¼ tsp black pepper
1/4 teaspoon paprika
Garlic powder (a pinch)
Method of preparation for Stuffed Chicken Breast
Preparation: 20 min; Cooking time: 30-40 min; Ready in: 50-60 min
Preheat oven at 175 ° C. Lightly grease a rectangular baking tray.
Make a cut in the middle of chicken breast and along each breast, being careful not to slice completely. Place 1 slice of cheddar cheese and 1 slice of cream cheese in the center of each breast. Close the breast like a book.
Pour the milk into a bowl. In another bowl, mix bread crumbs with Parmesan cheese, black pepper, white pepper and salt. Mix this mixture well and stuff in the breast with hand properly. Arrange chicken breasts in greased baking tray.
Melt butter in a small saucepan over medium heat. Stir in lemon juice and garlic. Spread evenly over chicken breasts; season it with garlic powder, salt in addition to paprika.
Bake it for 30 minutes or until the breasts are fully cooked.
Meanwhile let’s prepare plum sauce;
Ingredients
1 cup of dried pitted prunes
1 cup water
1 peeled tomatoes
1 cup soy sauce
1 medium onion
1 tablespoon vinegar
Butter, salt, sugar and pepper to taste
Preparation
Chop the onion after peeling and sauté in butter over medium heat, and then pour into the blender the braised onions, tomatoes, plums and water. Add vinegar and soy sauce.
Cover and blend until you get smooth mixture. Pour the mixture into a pot and simmer for 15 minutes. In the middle of cooking, season with paprika, salt as well as sugar.
Serving
When theStuffed Chicken Breast gets ready, serve it in a tray, topping with prunes sauce, also garnish with mint leaves.
